This is one of my favorite salads. The freshly minced garlic and dried mint combined with crunchy cucumbers and creamy yogurt is perfection. My favorite part? It only takes about 5 minutes to make and is so versatile! I’ve served it alongside breakfast, lunch, and dinner (as a salad, spread, or dip) and it’s always a hit.

Ingredients
  

  • 2 cups persian cucumbers (diced)
  • 2 cups plain whole-milk yogurt
  • 3 cloves garlic (minced)
  • 1 tbs lemon juice
  • 2 tbs dried mint
  • 1 tsp salt
  • ½ tsp ground black pepper

Instructions
 

  • Combine all of the ingredients in a serving bowl and drizzle with olive oil before serving
